 However, brewing the perfect cup of tea is almost a science which takes into account water quality, water temperature and infusion times. Boiled water is not considered good for making tea as the boiling process removes oxygen, making the water stale. As a guide, the perfect water temperature for the finest green tea is 60º – 75ºC, approximately 80ºC for white tea and water heated to 95ºC is perfect for puerh and black teas.
